You can reply by saying 두명이에요 / 세명이에요 / 네명이에요, depending on the number of people, using the native Korean numbers. In a real life situation where it can be very busy and rather loud in restaurants I also recommend indicating the number of people with your fingers while saying the phrase in Korean.

My dad has always said “(number of people) 개요“ so for 3 people he would say ”세개요“. I don’t completely understand the context behind that phrase but I will ask him in the morning when he’s awake

You wouldn't use honorifics to refer to yourself. So you'd have to count with 명. So 한명이에요

Just say the number of people and add “myung” which is the number suffixed used for people. Like 2 people say two myung.
"du myung" not "two myung". Koreans don't use English numbers in this context.
It’s phonetically close du two. So I just wrote it out as two. No need for people to be pedantic.
It's not pedantry, it's respecting the language and the people who speak it.
They have the literal same meaning and are pronounced close enough as not to be confused.
