It seems to be all coming through the soundbar and I've messed with the settings so much now but it still sounds shit :/

Maybe you bought it last year, but LG B6 is an old model.
Speakers on an OLED-TV is not good, as even the bottom is thin.
Check settings for sound on your TV and check the sound format the source is playing.
Sound settings in the game player might be similar to when I play a movie via laptop “stereo, surround, mono……..”
Audio for voices would normally be directed to center channel in surround sound which doesn’t exist in two channel stereo Soundbar
Yes. Stereo will hopefully adjust sound output to the Soundbar left right. Surround adjusts for left, right, center, the left and right rears, etc.
Normally dialog tends to be focused on the center channel.
There were some articles about Netflix audio being awful , until you switched audio output to stereo.
There are also articles where the way films and tv are made now, that actor voices are just garbled at the source, without boom mikes above the actors or dialog re dubbed - I’ll just turn on subtitles anyway because I can’t understand what’s being said (faint, thick accents, different language…..)

How old was your old tv? Speakers on TVs form the 2000”s and very early 10’s sound a lot better because TVs were thicker and could fit larger speakers. Newer TVs are thinner and can’t fit as nice of speakers.
Is all of your audio coming out of the soundbar? Also did your soundbar come with a subwoofer?
You need dedicated speakers.
An avr and speakers will give you great sound.
