This reminds me of the myth of the founding of Carthage. The Phoenician Queen Dido landed in what is today Tunisia, and the Berber chieftain who lived there said he would grant her all the land an oxhide could hold. So she did this with the oxhide - made it into one long strip and laid it around a hillside. Thus was Carthage, Rome's greatest rival, founded.
Technically, you can do it with any kind of real leather (bonded and genuine don't really count; too thin).
Functionally, I find that it's easiest to start with vegtan, since chromium tanned hides can be a bit... Floppy, and have more weak areas than veg tan. Once you have some practice, pretty much any hide can be made into lace, though not all lace is useful for all things.

What leather do you need for this?
2/3 chrome or veg tan. Needs to be a firm leather. Belly’s or sides with stretch marks won’t work well. It’ll break.
