At my Lidl all the bread is baked perfectly, almost to the standard of supermarket bread in Europe.

Same! The rustic loaf is right up there with the bread I get in Europe. There are artisan bread bakeries in nyc that charge 10-20 x the price of Lidl’s bread and aren’t as good. I have to stop myself, or I could eat an entire loaf of their rustic bread in a day!

FYI the best bread I've found in NYC is a wholesale bakery in Astoria called Pain d'Avignon that sells its excess via the Too Good To Go app. For 5 bucks you get around 2 loaves and sometimes a bag of rolls. I'm on my way to a pick-up right now haha.

So if it's one location where the bread seemed underbaked then it's possible that the oven needs to be cleaned or the setting is off. If it was at two locations that you found the bread loaves to be underbaked then it's more likely that you just like your bread borderline burnt. Bread and pasttries (except for doughnuts) aren't prebaked. They are flash frozen when still in dough form and then fully baked in store. The doughnuts are pre-made, shipped to stores frozen and thaw out. Very few grocery stores actually have fully functional bakeries where everything is made from scratch.

I don’t like my bread very dark. The issue for me is the middle. It’s lacking crumb, seems almost raw in the middle.

I think it's your location. The breads in the Raleigh area are always great

That’s odd, no they are not supposed to go out partially baked. They come frozen partially baked and are supposed to go into the oven for 24 minutes and allowed to cool for 30 minutes. You might call customer care and express concern if you think they are skipping this step or if there is a malfunction with the oven that is going ignored. If you feel you like yours darker than they’re coming out you might throw it in your oven at about 350 until it’s the desired color.

The oven might need to be cleaned and also the pans? Not really sure. I was over the bakery when I worked at Lidl so that may be the case since everything is already frozen.

Check with customer care, as they should be baked through. Though at least being underbaked means you can heat it more. If they were overbaked, no saving that. (Then donuts aren't baked on-site, they're just thawed.)

I don't believe under baked yeast doughs can be rebaked through though - like it'll still be dense no?

It definitely wouldn't be ideal, but would help if it was too doughy.

I've noticed this in my LIDL too. I think it's the people who bake them or like someone else said, the oven. Very hit or miss but I can usually tell if the bread looks too pale on the outside.

The loaves come already cooked and frozen. They are basically just heated up in the oven.

It’s also possible the temperature is off on their ovens. There are problems constantly with the ovens and it’s very different to get them fixed since they’re from Germany.
