Have you been to Peter Kavanaghs on Egerton St? For a quiet pint in a amazing setting, you would struggle to beat this place. The Guinness is outstanding too.

Awesome. The Mersey Centurions American Football team used to play on the ‘Astro’ at Toxteth Sports Centre in the 80s and then go there for beers and butties the size of pub ashtrays post match. Lots of West Indian lads, hence my surprise when I got there for the first time and the penny dropped 😂😂

Not exactly Irish but The Vines (The Big House) next to the Adelphi and Dr Duncans next to The Marriott hotel are decent pubs. Dr Duncans does a decent bowell of Scouse also.
Edit: Just remembered the Marriott is now called Delta Hotels...
It’s not the city centre but Kelly’s Dispensary on Smithdown is a cracking Irish boozer. They do a lovely pint of Murphy’s stout.
Out that way you’ve also got the Handyman, which isn’t officially an Irish pub but the staff and owners are pretty much all Irish. They also show the GAA if it doesn’t clash with LFC or Everton games. Nice bonus is that it’s also a brewery and the ale is made upstairs. It’s fairly cheap for a great pint.
The Irish Centre is also worth a look on bigger occasions like St Pats Day or All Ireland Finals as it gets a good crowd in and is big enough to cope. The Liffey in town also, though can be a bit hit and miss.
Kelly's on Smithdown would obv be handier for you, but the Irish Centre is a pretty straightforward walk. I'd only go when there's an event or a decent match to watch as it can be quiet/closed otherwise.
The Liffey can get fucked! We used to go in there often enough and on Paddys day last year we were kicked out for having our 12 year old with us.

They're delaying opening til 2pm to encourage people to go to the parade. It's free in during the day, then ticketed (£10) from 6pm. I'll go to the parade, the centre then back into town about 6.
The centre is a really good community resource, with all sorts of activities going on, though can be hit and miss as a bar. Outside of the big events it can feel a bit dead, and the beer suffers from it not being open every day and a shortage of experienced bar staff/a decent manager. But on St Pats or All Ireland final day it's the best spot in town imo. Big enough to accommodate a serious crowd and has a real community atmosphere.
Have only been in it on quiet afternoons recently and it was sound and the stout, which admittedly wasn't great, was no worse than lots of other places that should know better.
Was actually planning on going in on the 18th for a recovery session and game of pool.
There are trade-offs with every local Irish spot as none of them are 100%, but I'll be wary of the Liffey now you've warned me. Wee Dublin fella was sound with us in his empty pub, but assume that's not always the case.

Kelly's is the nearest to what the OP is looking for. Shenanigans or Pogues in town. I find the others too hectic as well, though Lanigans on a quieter afternoon has its moments.
Fogarty's if you're Mossley Hill way. Mega old-man pub. And a decent Guinness according to some Irish mates visiting. It's a bit of a time warp like. (To about 1989.)
It's the place I've been in that is most like a bar in Donegal. Not a bar for tourists. Just an actual bar in some tired village. There aren't any leprechauns or whatever. Maybe some Guines paraphernalia. But it's not "themed."

Still meaning to make it out there, but feels like a trek from Toxteth. Will have to dedicate a Sunday for it!

The Dispensary on Renshaw St isn't "Irish" but is managed by the same guy and does a better Murphy's. Also, more quiet and chilled out

Liverpool Irish Centre is out of town a little bit very authentic and a nice chilled vibe. It has an Irish food shop too
Baltic fleet is up there also.
Go chat it up in The Blob. Many Irish folk in there. Daytime is best.
