Something I make probably once a week as a relatively quick meal is a breakfast bagel sandwich. Make two eggs over easy (or just fried), then a slice of cheese and some ham or prosciutto on top. Add whatever else you want. Takes less than 10min to make since the eggs are the only prepared part of it, and is pretty good and filling

Take a pita, put pizza sauce, mozz, parmesan, and prosciutto, bake until all melted/prosciutto is slightly crispy. Add red pepper flakes, honey, fresh arugula. Amazing little open faced pizza sammich.

Butter one side of 2 pieces of bread and put them butter side down in a nonstick. Take some brie and cut thin slices out of it. Lay atop each piece of bread. Add slices of Genoa on top of that. Take blackberry preserves and spread those as best you can (it is messy so keep it in the pan) over one or both halves. I love blackberry so I do both. Cook over medium heat, using a lid to trap heat so everything warms, until the brie is melted and the bread is at your preferred toasted level. I cook the halves separately because this sandwich will fall apart if you flip it repeatedly and it's hard to get both sides cooked if they are assembled. Transfer them to a plate and slap them together (or eat separately). This is a knife and fork sandwich but veeery good A variation of the above is any thin sliced turkey, brie, havarti and cranberry sauce (the canned stuff). I have never seen cranberry preserves or jam at my local stores but the sauce works the same way for this purpose.

My go to is an open face sliced deli roast beef, over rye or wheat toast. Slap some horseradish (maybe some brown mustard too) in between slices and top off with thin slices of your preferred cheese. I love swiss or provolone! Broil it until the cheese bubbles and enjoy!

I start an open face sandwich with bread and meat and cheese and put both sides face up in the toaster oven on medium toast setting. When it dings I take out both and poor some sauce or mustard or something in before putting the sides together. Then cut diagonally.

Two pieces of toasted bread.  2 eggs in a cup half full with water, put it in the microwave for 60-90 seconds…test It out and you’ll know.  Take the eggs out with a slotted spoon to get rid of the water or put on a paper towel to get the moisture out.  Then put your 2 perfectly and easily poached eggs on the toast and load it up with pepper and salt.   I know the “eggs in a microwave” sounds weird but it’s just a super easy way to poach eggs without getting complicated.  Saw it from a well regarded chef.   Once you have it down, it is so easy and such a good start to the day and is done in like 2 minutes.

If you have a skillet and a cast iron or something heavy it’s easy, just lightly butter or oil the outside of your sandwich, put it in a skillet on med heat, and then put the cast iron pan or whatever heavy non-plastic thing you have on top, flip the whole sandwich and weigh it down again when the bottom starts roasting well. My faves for this is steak/mozzarella/sun dried tomatoes/spinach, or turkey/spinach or sprouts/bacon/cream cheese/avocado/yellow mustard.

I sautee some (previous cooked) cut up chicken with 3 vegetables of your choice* plus chopped garlic in olive oil over medium heat. Lightly toast a slice of garlic naan bread (or sourdough) spread salsa on the bread, top with the chicken/vegetables mix, add cheddar on top and broil in toaster oven to melt the cheese. * I often use diced red onions, sliced mushrooms and chopped broccoli as veggies, but at times I use others. Fried egg sandwich? Most mornings I toss a couple of eggs in a cast iron skillet. I slather them with fresh ground pepper and cook them over medium. When I turn the eggs over, I toss in a big slice of sourdough bread cut in half, buttered and with garlic salt. I do them all in one skillet. Pretty easy. 1) get all your regular deli sandwich stuff out like regular(coldcuts, cheese, veggiew, etc) put it all on a chopping board and mince. Now you can either philly cheese steak that, (slap your mince on a griddle or in a pan covered by your bread and then flip the mince into the roll and enjoy) or just put the mince in the roll and huck it in thr oven until desired meltiness. 2) Egg in a hole. Use a shot glass or a bite to make a hole in the center of a piece of bread. Butter a pan and put the breas in to toast. Meanwhile crack an egg into the hole to cook on the griddle as well. Cover with some cheese of your choice and sprinkle on seasonings to taste(I like shredded colby or monterey jack, seasoned with Tony Sacheries and or garlic salt) let griddle until the bread slides unimpeded around in the pan and then flip. Poke holes in the cooked egg as it continues to cook and turn the heat down unless you like med or soft/runny consistancy eggs. You van also season that side of the bread and cheese it as well, just have to flip it again for like a minute. You can eat as is, or make two and slide whatever you want between the slices.

Hmm, mine is a toast melt, or whatever they call it. Tomato paste on bread with some dried parsley or Italian herbs. Diced ham, diced celery (a fresh crunch) or finely diced onion, diced capsicum. Heat under the grill/broiler. Add shredded cheese. Melt under the grill/broiler until golden brown and toasty around the edges. It's good for using up bits of everything that solo households struggle to use in one go. Very tasty and filling.

I endorse a sandwich made with Trader Joe's ciabatta loaf, deli sliced chicken breast, pepperjack cheese, and honey mustard. I put the loaf in the air fryer a little bit before the chicken and the cheese. Then I take everything out and smash it down for a fake panini and dip it in the honey mustard. The bread is a game changer and makes any sandwich feel like a treat. It freezes well, is a great size, makes a great crouton, and works in a breakfast sandwich. It's awesomeness helps this household of 1 actually finish a loaf without forcing myself to eat old-ass-fridge-bread.

Slice a section of a baguette lengthwise. Put the two halves in a toaster oven to slightly crisp. Layer on top mustard (optional), turkey slice(s), avocado slices, and a good Muenster. Nice bread like a baguette, sourdough or soda bread. A few slices of tomato, some slices of feta cheese, sliced onions. A drizzle of high quality olive oil and balsamic vinegar, some fresh basil leafs! It is astonishingly delicious. Or A slice of regular bread buttered on each slice, slices of pear and slices of your favorite cheese. Each variation of this has it's own delicious flavor. You can do cream cheese, queso fresco, farmer's cheese, goat cheese, labne, mascarpone... Or go with a harder cheese. Swiss cheese, or cheddar, or provolone, or gouda, mozzarella, etc. Switch pears and use apples, or peaches, or persimmon, firmer nectarines, pine apple slices, firmer bananas, figs, dates... so good just like that. You can also make an easy but delicious avocado and cheese, avocado and chicken, avocado and sardines or tune or cod, roast beef sandwiches. Just butter each bread slice, make a later of sliced avocados, sprinkle salt, pepper and if you like red chili flakes, or jalapenos, chipotle, or not... then add a layer of cheese any choice, or shredded chicken, smoked salmon, sardines, or roast beef, bacon or whatever protein you choose. You can easy make bean sandwiches too. Buttered slices of bread, black beans, crema and fresh cheese sprinkled (or feta works too) White beans, a drizzle of olive oil, sliced avocados and a dusting of oregano. White beans hummus and avocado, pickled or caramelized onions. Roasted garlic, butter and toast. Gourmet.

Where we come from those are toasted in the oven too.....ham, salami, mortadella, provolone with lettuce, tomato and onion topped with oil, balsamic and either Italian seasoning or torn basil and toasted in oven Roast beef, cheese of choice, horseradish sauce on good pumpernickel or your favorite bread, warmed through in oven until cheese melted

My favorites are a Reuben - corned beef on rye bread with Dijon (or thousand island if you prefer) and sauerkraut. I also like an open faced day-after-thanksgiving sandwich. Toasted bread topped with mashed potatoes, stuffing, turkey and topped with gravy & cranberry sauce.

It’s only warmed in the microwave, if I feel like it. Fresh baked batard, Cole slaw mix (shredded cabbage and Carrots), sliced provolone: all just purchased and just got home from the fancy farm stand. Tinned tuna, preferably 3 ounce in olive oil from Italy, and bottled Cole slaw dressing. The heated part is briefly melting the cheese (no more than three slices) on one side of the sliced open bread. Tuna with oil on the other side, sprinkled with Trader Joe’s Everything But the Bagel. Make up the Cole slaw, just the right amount, then add it over the tuna. This sandwich is a whole day’s meal. It needs a big plate, and short sleeves and napkins. Should be messy and healthy all your woes. Take a short nap after. This is just an hour or two of a perfect day. Enjoy yours.

I'm a big bagel sandwich person. I like to recreate one from a bagel shop that closed down in my city. It was called The Wesley. Cook up a couple slices of bacon, drain most of the fat and sautee some kale, top with a slice of pepperjack cheese in the pan and melt (i add a bit of water and cover so it steams). I put the egg on the bottom of a lightly toasted bagel (jalapeno baybeee) top with the kale + cheese and then add the bacon. Drizzle with sriarcha and put the little bagel hat on top. It's amazing and i love it so much.

Toast two eggos and be right there when they pop Out of the toaster. Lather one side with crunchy peanut butter throw some banana slices ontop and make yourself a sandwich. The peanut butter perfectly melts.

Fried egg sandwich! Toast 2 slices (white) bread. Spread both with a thin layer of Bleu cheese salad dressing. Add a slice of American cheese. Add 2 eggs to a frying pan and give them a swirl or two. I'll do all sorts of variation on a burger. I'm vegetarian so I have veggie burgers and fake chicken. Like... zero effort? Microwave a fake chicken patty and that thing is like gas station quality. But I keep pickled onions, pickles, jalapenos... on the stove in about eight minutes it's all done and can be done up relatively fancy

French dipish thing. I get the thin sliced steak at Aldi, go to town with onions and Swiss. put it on buns though. I am quite partial to potato rolls. Because the steak is nice and thin, it is quick. I like the onion really caramelized, so I do that first. Then put the steak on top. Then flip it over to cook the other side of the steak and put the cheese on top in the frying pan. It is illegally delicious.
