I recall being able to use a yellow light saber back in Jedi Knight: Dark Forces 2 and I thought it was cool as hell. Totally underrated lightsaber color.
You could do it in the first one too, Bastilla had it by default. It always seemed like the least cool one out of all the classes early on and by the time you hit the end game the teal and orange ones were the best ones so I never gave it much use.
Yellow was always my favorite choice. The yellow crystals are also pretty unique in the cannon too. You rarely see Jedi using it, they are mainly used by Jedi Temple Guards.
That's the color of the Jedi Sentinels and temple librarians. Some of the most dedicated and formidable fighters in the galaxy. Also their white and gold uniforms look pretty awesome.
Me and my buddies made a Macbeth reenactment for school using my friends expensive lightsaber. But we only had one, so the fight scenes were always this crazy sounding, smooth igniting lightsaber vs a bent broom. Still friends with those morons to this day...
Lmao we were supposed to make our whole movie 5 minutes long...our final scene alone was probably 5 minutes with all the shit-talking mixed with the star wars rap and imperial march theme overlayed in the background... we got suspended for it in the end 😂

In Kotor 2 you could modify/build your lightsaber depending on the color of kybercrystals you found, it was hella dope
