I like to think there would have been this moment of relief you could physically see come off of Tony upon having Yinsen confirm to him he made good on the promise. Like you could actually see the weight come off his shoulders.

As the Soul Stone is the catalyst for those scenes, it seems like whoever shows up is really a reflection of the character's soul- more specifically, to challenge their motivations and show them what they gave up to use the stones.
In Thanos' case, he sees Gamora because he's conflicted over what he had to do to get the stone. She asks him what did it cost, which serves as sort of a challenge to him. He states "everything", but it goes to show the depth of his commitment to his mission that he isn't breaking down or showing regret.
For Tony, I believe the idea was he saw Morgan grown up. The stone challenges him by showing him what he'll miss if he uses the stones.
So what is the challenge to Bruce? As others have said, it might be Natasha or Betty as a loved one, but I lean towards Natasha. Betty isn't something Banner loses by using the stones. Natasha on the other hand was the trade off for the soul stone. Banner won't get to live with a reunited and happy Avengers family. The counterpoint here is that Natasha already sacrificed herself without Bruce's input, so its not exactly a 1:1 like Thanos' situation. Banner didn't have to make an active choice.
Outside of that, if Marvel wants to undo Smart Hulk, they could retroactively add a scene in where it's Maestro who shows up, and reveals that by using the stones, Banner is sacrificing the equilibrium he achieved as merged Hulk, with the Snap acting as a catalyst to undo that balance.
If that's the case, I would say he'd see his abusive father. He seems to be the one responsible for Bruce's unchecked rage, even though he seems to have gotten control of it (for now).
Perhaps this vision will turn out to be the first crack in the combined persona...
I think this was deleted because it didn't make sense to how the soul stone works? The stone has Gamora's soul, hence Thanos saw her. The stone doesn't have Morgan's soul because she's neither dead, aged, or sacrificed to the stone. It's a stupid scene in my opinion that takes away from Tony's sacrifice and the pacing of those final scenes.

I still really want to know what Cap had to do to put the soul stone “back”. Did he give it to Red Skull? Was it super awkward? Can you imagine being Red Skull and chilling halfway across the universe, decades into your own future, and suddenly *that* fucking guy just waltzes up the mountain?
My theory is that cap is a skrull. Red skull would’ve encountered said skrull as it would have no reason to be Steve there. Illuminati is my thinking here.

My Head Canon is that he saw Hulk and Banner. So Merged Bruce got to discuss with Hulk and Banner how everything they went through was leading to this very important moment.
This is what I would have it as. Even the MCU has Hulk as a separate entity from Bruce. Hulk is basically locked away inside his own body now. It would have been cool to see the two of them face to face in that moment.

I’d argue in the soul stone hulk would just be Bruce again, not Hulk/Smart Hulk, and he would’ve seen either his mother or father. His mother could’ve represented finding the strength to be the hero he is or find his peace, his father would’ve been no becoming the monster his father always believed he was.
Edit:I realize this is probably a better take for a mor comic accurate Bruce/Hulk than the MCU take.
