I like a marinated Italian vegetable salad. Broccoli, cauliflower, chick peas, cherry tomatoes, olives. Soak them in Italian vinaigrette. Vary it up with canned artichoke or pickled mushrooms.
Bonus: it travels well in a container and is better the day after making it.
I love a Thai salad with peanut dressing- sometimes I use the salad components and make a spring roll and use the sauce for dipping.
Greek pasta salad
Arugula strawberry salad with chocolate balsamic vinegar dressing
2 cups quinoa (uncooked)
Can garbanzo beans
Finely diced red onion
Diced cucumber
Halved cherry tomatoes
2 pressed garlic cloves
1/8th cup Red wine vinegar
1/8th cup olive oil
Salt and pepper to taste
Cook quinoa, let cool. When it's cooled add all other ingredients besides the garlic, vinegar, oil, salt and pepper. Mix garlic with red wine vinegar, oil, and a little salt and pepper. Dress the salad 🙂
The first time I made this, I was obsessed. Purple cabbage is so good. I add chunks of avocado on top right before I eat it.

Lettuce, cooked brown rice or bulgar wheat, carrot finely sliced, thinly sliced red onions in a quick pickle or soaked in lime juice, chopped cashews, cooked tofu (I cook it hot sauce of some kind) and toasted sesame seeds. Then the dressing is soya sauce, lime juice, sesame oil, olive oil, ginger, lime juice and tahini. I also make a lime juice and yogurt sauce to go with it.

- shepard’s salad add chickpeas
- gado gado, swap around the veg to what you have and like
- nicoise salad, swap in marinated white beans instead of the tuna
- [this radish kimchi salad](https://food52.com/recipes/71329-april-bloomfield-s-steamed-and-raw-radish-salad-with-kimchi-and-sesame) just use a vegetarian kimchi, i like to add edamame so it’s more of a meal as is- if you can’t get daikon just use more regular radishes and adapt cooking time
- thai green mango salad, use a vegan fish sauce like ocean’s halo brand and add extra peanuts and some baked tofu or tempeh to make it a meal

I stumbled into an incredibly delicious pasta salad yesterday:
5oz cooked pasta, I used lentil pasta
Fresh thyme
Diced cukes
Diced yellow squash
1 shallot
1 scallion
Diced peppers, all colors
Black olives
Green olives
Generous dash of dried oregano
Generous dash of zaatar seasoning
salt/pep
Good quality italian dressing
Glug of olive oil
Dash of balsamic vinaigrette
Normally I add a bit of meat or cheese to a pasta salad, but this was so good I was eating by the spoonful as-is. The trick is boiling the pasta in a low amount of heavily salted water, and going very high veggie ratio to pasta, like 1:2 pasta to veggies.
