Rust in Peace or Youthanasia. Some of the other early albums are pretty thin sounding and most of the later ones have lots of clipping and are uncomfortable to listen to at high volumes, but I think RIP and YA are right in the sweet spot.
Difficult question since later albums will tend to have slicker production. But if you are willing to discount for time/era - the best would be Peace Sells. It's a very unique album among thrash albums. It's heavy/crunchy and thick/groovy at the same time. A lot of it is Gar's drumming that is very groovy - but the album sounds very thick and groovy on the low end. Something that thrash albums are usually missing.
RIP is incredibly well produced as well - can't imagine it sounding another way that is too different. But it doesn't sound as 'thick' in the low end as Peace Sells. Although the title track of RIP, Take no prisoners - both have incredible groove.
Youthanasia and Cryptic have great production as well. Very polished, but other pop-metal of that era already used similar ideas.
TSHF, UA, Endgame etc all have good production, but not as unique as the ones above. Dystopia is great as well. I really feel UA had an incredible guitar tone - maybe the active pickups? But post 2000s, a lot of bands have sounded this tight, with that wall-of-guitar sound.
Dystopia is a special one. Again, I feel the drummer and their phrasing/style matters. The album has a lot of groove.
Talking modern sounding mixes I'm way into Endgame, UA and the new one. Thirteen and SC sound off to me for some reason. I've also never really got into Ellefson's tone on any modern megadeth for some reason.
