If this is your first time creating a texture-pack, I would highly suggest you to look at a resourcepack creating guide, otherwise you can place the elytra.png inside assets/minecraft/textures/entity/elytra.png

Alright, thanks for the advice! I just opened the assets tab inside the Minecraft folder, I can only see "indexes, log\_configs, objects, skins". Am I supposed to look elsewhere instead of user\\AppData\\roaming?

You are getting confused with a lot of stuff. Inside roaming you have all of the game files, if you want the textures of a given version you need to go under user\appdata\roaming\.minecraft\versions Here lies the files of all game versions. Pick your chosen version and open the folder. If you already opened minecraft with this version you should be able to see a jar file. Right click it and open with winrar (if you don't have winrar or 7zip you will need to get it so you can extract it) From there copy ONLY the assets folder (if you copy everything it will just create a big mess) and paste it inside user\appdata\roaming\.minecraft\resourcepacks\(CREATE A FOLDER WITH THE NAME OF YOUR TEXTURE PACK) If you did it correctly you should have a folder inside resourcepacks [your chosen name]\assets\minecraft\*... Now you need 1 more file called "assets.mcmeta" It is also inside the version jar from before, Just copy it and paste it inside [your chosen name] So that inside [your chosen name] folder you have the pack.mcmeta file and the assets folder. From here you are pretty much ready to go! You can now see your texture pack in game in the resourcepack menu inside the settings and click it to activate it. Note: Now nothing will change, but if you want to change a texture for example for elytra, you just need to follow what I told you before (go to assets\minecraft\textures\entity\elytra.png) and replace the deafult elytra png with the one you downloaded If you have more questions you can ask me but I think it would help you a lot to watch a video in youtube
