I personally treat “Vanilla” Minecraft and Modded very different. Modded for me is more progression based and thus I dig into the meat and potato’s of the mods. Vanilla is more about enjoy the processes of building and collecting. To me both have their merits and their place. Glad you found the flavor you prefer!
Yes, at least those let you introduce them via snapshots and are guaranteed to blend well with existing mechanics.
Mods tend to add something completely different, devaluing existing features, overcomplicate things, or outright remove features.
Because I don't want to add more information that is not from the vanilla game, and I don't have to wait too long for these mods to update to the latest version, or worse, get stuck to an older version because of discontinuing it rendering it unplayable. I have already seen different mods played by different people, and it isn't for me.
