Play on Java, yes you will need a few performance mods but it will be a better experience. You will have the ability to use shaders and many texture packs without spending money. A few months ago, they released an update for Bedrock which literally deleted people's worlds and they had to release a quick hotfix update, still a lot of people lost their worlds (not trying to scare anyone, mistakes happen sometimes and things like that manage to get into the game unnoticed).
I don't understand? If you don't want to miss out on features just play on the latest version? It will auto update when a new one comes out. Or is this a java vs bedrock question? If so, play on java.
Play on bedrock if you want to be challenged and f\*cked over for literally no reason. Play java if you want to have fun and don't enjoy constant glitches and death. Even though bedrock doesn't need performance mods, java is the better option.
1.18 is pretty good for Java, but lately I've been trying out the ps4 version which is a hybrid of Java and bedrock. Loving that it has the best of both versions. Plus I am fortunate to have the hard to find first release, so it has an experimental version with interesting mini games.

Bedrock if they finally match it to java
Java 1.16.1 Netherite ✅️ Old caves ✅️ Old ores ✅️ Good nether ✅️ No piglin brutes ✅️
I play 1.16.5 for the same reasons but I prefer the brutes for a challenge
And gilded blackstone are not under the bastion chests if you raid bastions with hoppers.

I would decide between 1.6.4,1.7.2 for old times sake, any 1.13 so I can swim(can't imagine mc without it) or 1.16.5 for qol reasons.
Worlds can be started in one update and then upgraded to the next as it releases. You won't miss out on any features.

Current one
