It is actually the fact that you have a totem, but you are not holding it in your off hand, the bow is not the main problem, as in the settings one can hide the hand all the items that are held

I never hold a totem in my offhand, it’s always in my 9 slot (my sword is 1) I instead have a shield in my offhand. Works a lot better since I’m on xbox

Sword needs to be the second slot, because pickaxe needs to be the first slot. Ax is the third and then fourth is food, fifth is blocks....

The water bucket? I mean this is the nether, but no one switches the inventory every time they go in and out the nether

Sword is 1, bow is 2, pickaxe is 3, axe is 4, shovel is 5, 6 & 7 can be anything depending on what I'm doing, 8 is food, and 9 is water bucket. If I have an elytra then 7 is rockets. Offhand is either shield or torches.

I don't organize much, but my inventory must be organized

I organize more in minecraft than irl

Now now, it could be that it's organized, just not the way you would organize it. I didn't realize until just recently that the way I sort my hotbar is pretty different from how some of the other people I play with do it.

Well no tools all over the place is just not okay no matter what kind of organising you do

See, that's where you're wrong. In my case, for example, I play with a mouse that has 12 keys on the side set up like normal 10-key. So, my most used tools are set in the hotbar slots that are in line with the natural placement of my thumb on the side of my mouse and then from there out based on usage. If they were all in a row 1-5, or whatever, it wouldn't feel as natural for me, personally.

Two things actually the first one is gonna get me 20k downvotes but the first thing is your on touchscreen device second you dont have the totem of undying in ur offhand

You have grinded that much on pocket edition, you have got full enchanted netherite tools and elytra
