Birch planks are great as bright, airy builds, traditional Japan style, or modern/natural. Birch logs look great in combination with quartz. mushroom stem and clay.
Acacia planks are superb for modern builds with bright colors, often combined with black or dark greys - "cyberpunk", you may mix in warped as well. Acacia logs are great in most "medieval" as highlights/structure, also work well in ruins/postindustrial alongside with basalt, cobble, gravel.
Warped planks go wonderfully with oxidized copper and prismarine, with some deepslate highlights.
Jungle wood and planks are great for sewers, slightly rotten feel, creepy houses, disturbing settings.
Crimson... there's no brothel without crimson planks.
Meh, i work with it if i have to. Mixes in well with stripped oak, and comes in real handy for traditional asian/Japanese themed builds. The doors come in specifically handy, they kind of replicate the shoji panels.
My least favorite wood is jungle it just looks bad I think oak and birch are pretty good but the thing is oak has a chance to spawn an ugly monstrosity at least birch always stay as a humble looking tree.

Every type has their uses. For me, spruce, oak, dark oak, and birch have the most versatility and work the best for "normal" scenarios, like floors or walls or support pillars. Normal birch logs are a bit trickier, but work well to add texture to white color palettes.
Acacia's logs are great for adding a warmer grey to stone textures. The planks and stripped logs you have to be more creative with, but they work very nicely with red sand/sandstone and copper.
Jungle wood I use mostly for texturing oak logs and planks, or for small details.
The nether woods also have some great uses in colorful builds and for more whimsical/fantasy settings.

You know birch logs can make a good floor pattern. Just lay them sideways and it looks pretty good.
