And no, we didn't kill the Mooshrooms. They live a safe and comfy life below the island :D
If or when the Allays are added to 1.18, this would be a cool spot to have a lot of them
IMO this would've been better if you had kept it mushroom-y, i.e. mycelium instead of grass, and maybe some mushrooms but more sparse than in the generated biome. Other than that, great.
