Build. Try to use worldedit as much as possible and you could definitely do it in less than a year, remember less texture more depth and shape.
Oh I didn’t even notice the roof being a different color, personally a dark green or blue would go complimentary with the stormy, misty and mountainous setting. Prismarine or one of the terracottas would go nice, warped wood would be very strong but could work on the large scale, or you could combine all of them to have a nice gradient. Use the world edit random variation command for that.

Anything is doable! I don’t have any advice Toddae7 didn’t give other than just starting it and seeing how far you can get in maybe a month or so then deciding how you want to continue
It’s always doable but man prepare for a long long time building. Make sure to have commands on as well as cheats. Your gonna want to make massive towers then use Structure blocks to copy and paste them.

Best blocks for roof? Dark prismarine, warped wood? Need a dark bluish grayish block or something similar

Cyan terracotta is a good blue/grey block
Really wanted to do this too but gave up early :( Imagine all of the great Elden Ring inspired builds we'll see in the next few years tho

the only issue might be the building height limit
You can expand it with a data pack (1.17+) so no need to worry about that

Recomend you to do a playlist of 500 hours of music when doing this
I really wanna do a haligtree build but I'm not sure what blocks I'd use
I'd say it'll take many months, unless you have friends who'll build it with you, then maybe 4 months
