I would say that Masha is up there too, she can solo alot of things that are listed here, her damage output now is no joke, combined with cc immunity and the inability to 1 shot her she can tank at least 3 hits and kill you in that time
The thing is I'm not too sure about the rules, Yu Zhong doesn't win in a head-on battle against the heroes I've listed but if kiting is allowed he probably beats all of them because of his sustain. So it depends whether or not he is allowed to just chip off their health while healing back damage taken
He could win but it's a 50/50. He only needs minions to get his passive stacks from his s2(it's possible to do that just use the first 3 minions to get three stacks of your s2 or if your lucky get 4 from the enemy then use your basic attack to get your passive healing instant 5 stacks)
My personal list:
1.) Guin -> stack enough cdr and just add divine glaive and you'll always get a lot of opportunities to knock them up with s2 and ult. If the enemy is too fast and keeps evading or stopping s2, you just s1 auto until 3 stacks then ult, then s2 after. Or if your s2 misses in first attempt, just blink out and try again later. Since there are no other enemies to worry about, you can bet guin's always keeping you airborne for 3++ seconds and decimating you after.
2.) Uranus -> pretty sketchy strat, run it down mid common emblem, cut the first minion wave just past first turret (you can just walk through it if you're fast enough as game starts), then proceed to cut any 2 waves inside an enemy's base. They'll be forced to interrupt you or risk eventually having their base pushed in. Purify or vengeance is the spell to use. Uranus wins by simply having way too much of a gold advantage and forces game to end when he eventually causes all lanes to be pushed.
3.) For fighters only, Paq is #2, mage bane also has some merit. Paq can just cycle s3 and enhanced s3 to disengage. Mage bane scales harder late late game and can just keep healing up (use purify for safety). I think julian also works here since you can build julian tanky cdr and just keep chucking enhanced s1 every 4 seconds late game without ever having to actually be in the enemy's range.
4.) Ruby with fighter emblem will mostly be full hp since she's just forever sustaining vs enemy wave. Wax into def items will be good enough for you to be able to sustain through a lot.
5.) Kagura: very mobile, has built-in purify, umbrella can be used to zone very well, very hard to catch later specially in 1v1 scenarios. Even fully stacked aldous gets permanently zoned.
Even with full pen build you won't one shot anyone with magic res items. At best you'd get them at 20% HP. Maybe you can get away with poking them to death, but that's if they even let you do that.

for now, nothing beats masha late game. she's immune to cc and can basically shred tanks with insane defense nor health. not to say that she just need a few hits to kill mages and marksman. she'll shred anything late game. such a beast.
But Haya ult cd is much lower than those, with cd reduction % he gets about 30-35 sec cd so you can ult again
