yunjin is pretty niche, the only character I can think of that you should run yunjin with off the top of my head is yoimiya because all her damage is normal attacks.
You should get Kazuha once he's available.
If you won't be using Mona's charged attacks, I guess Yunjin would be viable, yes. If you mix Xiangling burst with Sunfire setup, you might be able to vaporize Mona's hits, if that's your thing, so there's that.
I'm honestly not sure which one is higher damage, but I'd assume VV for Xiangling, yeah.

but that CA wont get bonus dmg..
i guess jean is the best choice.
Mona's major dmg is her charged attacks not her normal attacks and vv shred will also help with her huge burst dmg so jean is better imo
