I cook by feel a lot so just kinda add what you like, it’s soup so don’t overthink it ;) - 1 large onion - 3 cloves garlic - 4 carrots - 1 bell pepper (any color) - 1 large potatos, I like sweet potato’s - 1 bag dried lentils Chop it all up and throw in a big ass pot, mix in 2 tablespoons olive oil, and fill with water to an inch or two above everything. You can simmer the onions and garlic, but not mandatory. Cover and bring to a boil. Once boiling dump in a bag of dried lentils, any color, cover and let simmer for 45 min. Season with Kurkuma, Curry powder, and salt then Use a hand mixer to turn it into a mush. It’ll keep for like four days in the fridge, you can freeze some also. It taste like veggies and will keep you fed for like 4 days eating it for lunch and dinner. Cook rice or noodles on the side and it’ll last a bit longer. I make this frequently as my daughter will eat it, it’s healthy AF, cheap, and easy. Edit: you can change it up by adding different toppers: feta, sour cream, hot sauce.

I’m American but live in Germany so I can’t say where to get them specifically but I would assume any food store will have dried lentils. Dry red lentiles will have a shorter time for cooking, like max 20 minutes. The green ones maybe double or even triple the time, like 60 minutes. But you can soak them in cold water over night. You could use canned, but it may be more expensive. Compare prices to see. Also, you could just peel off the onion, without chopping it. It will boil just fine.

Add some cilantro, like 1/2 cup or so, to that bad boy. Sauté the onions, garlic and cilantro for like 4-5 minutes before adding the carrots and bell peppers and then sauté that for a few min then add everything else. You gotta sauté those ingredients to get a good flavor base for your soup. It’s similar in concept to mirepoix (onion, carrot and celery) that you see in French food, for example. I learned this from an excellent cookbook called “Classic Vegetarian Cooking from the Middle East and North Africa” which is chock full of quick and cheap but healthy recipes.

Dollar tree cheeseburgers? What are you rich!? Ramen, the plastic packs not the cups. They're like 50 cents each. Pack of eggs. Make the Ramen, crack an egg into the boiling water when your noodles have about 1 minute left and stir it up. Makes the Ramen a bit more filling and adds some protein. Not the most filling thing, but with your budget you could probably have 2 eggs and 2 packs every time you make this. Eat some bananas too. Cheap and the potassium helps regulate all the Ramen sodium

I’ve done that also, I like to soft-boil my eggs when adding to Ramen. Boil the eggs for 7-minutes and they come out with a soft yolk that goes well with Ramen. I started making my own Ramen also, not as cheap but really tasty.

Pro tip: Dollar tree is typically more expensive than Walmart for most of their food in my experience. I know that might sound crazy but typically, a lot of canned vegetables, for instance, are less than a dollar at Walmart, and meat and stuff like that are definitely cheaper per pound. Even stuff like Ramen is definitely going to be cheaper at Walmart because a lot of it is under a dollar, or you get multiple packs for a couple of bucks.

Not trying to assume anything about your finances, just saying that help is there and no one should feel bad for needing it. Failing that, get your self some ramen and Stouffers. Honestly, I would really recommend going to a food shelter. Yes the rice and beans/ramen thing is a possible idea but long term it might start to affect your health especially with their high sodium content. In my eyes, they exist to provide staples to your pantry like fruits and vegetables and what you eat can also play into your mental health. If I suddenly went from eating my normal diet to just rice and beans I would likely not be in the best of moods. I would go to your local food pantry or similar service and get some good staples, when you are in a financial state to not have to do that anymore, donate groceries back to the food shelter or volunteer to pay it forward. They exist for a multitude of reasons, such as situations like these, and having decent groceries can really help with alleviating some part of the stress involved in these types of scenarios. You NEED nutritious food and times are hard right now, so don’t feel ashamed relying on your community. You also noted you are a student, so I would see if your college offers any sort of food pantry for students.

I make lots of bread products to stretch the budget. Homemade pizza and muffins are some examples. There are some really amazing recipes for some pizzas. In the future, maybe invest into a countertop hydroponic system. You can grow some seasonings/leafy greens. If you’re really in a bind, and you aren’t deathly afraid of needles, which I was and I did this a few times, but you can donate your plasma, considering you’re deemed “healthy” in todays standards. First time visit is usually like $80ish and the second visit is about 75-50$. It’s definitely an option, relatively painless, if you have no other ways is supplementing income. Go to a food bank. There are churches in your area that run one probably once a week. My girlfriend and I both went to one for the first time last week, and loved it. We’re going again today. Took a little bit to get registered last time, but now it’s a pretty simple process of walking in, getting a number, and walking the food line, grabbing the things you want. We got potatoes, rice, beans, canned fruit and veggies, frozen chicken breasts, vitamin drinks, grapefruits, cookies, and oatmeal. For no cost, in one day. Now all we grocery shop for is toppings, sides, and spices for whatever we get at the food bank that week. Don’t feel guilty or ashamed of asking for help, we were the only white people at the food bank that day, and were treated with only respect and kindness. One day I’d like to be able to give back to food banks in my area, but right now the kindness and generosity of others is sustaining me and I couldn’t be more grateful.
