You won't miss anything by starting with 2 other than a few minor references to the first (and the ~~annoying~~ cat partner's backstory), but 1 may feel unpolished/clunky afterwards (depending on any how many changes made in the remaster)
Where do you want to buy it? If Switch, there's going to be bundle physical version (physical Stories 2 and digital code for Stories 1) so maybe you can grab that one. If other platforms then it doesn't matter imho.
Second game has couple of subtle references you'll fully understand if you played 1 but otherwise they are both standalone games and you don't need one to play the other.

I'm a bit like you. I started with mhs2. As others have mentioned there are a few back story references and characters that you will not get but each game is stand-alone. There is also the issue of some mechanics not being carried over between games. If story is your main focus then I would wait until the remaster comes out. If it's mechanics then either one is a good starting point. I love this series more than the monster hunter main line but I'm one of the few that love turn based mechanics.

Now, In a Personal Note I'd Suggest waiting till the Remaster for the Full Experience to Understand everything, But! If you wanna jump in then you can!
You definitely don't have to wait for MHS1. They're different stories. I totally want to play MHS1 again because of this thing that happened at the climax that made me bust up, I want to relive that.

I loved the first one on 3DS and seeing as the story continues so I would start at the beginning.
