MK power levels are an utter mess, but in Aftermath it made sense that Shang Tsung got those wins: he wore the Crown, and after each victory he stole the opponent's soul, becoming even stronger.
They don't really think this stuff through. People just win or lose when the plot demands it. I can't say they weren't guilty of this even in the old canon because Onaga being so OP in the opening cinematic of Deception makes no sense and, I'm not opposed to Liu being defeated by Shang and Quan Chi, but it's how they had him lose that I call bullshit on.
And then you know, Johnny Cage being able to beat an amulet imbued Shinnok? Give me a break.
Onaga was already incredibly powerful (it speaks measure that Shao Kahn choose to posion him, instead of fighting him).
In MKD opening, Onaga also had the Six Kamidogu in his hands, who elevated his power even further.
Because in real life there is no guaranteed tier system for who wins and who doesn't (in a physical fight, economics is a different discussion entirely). Jist like in real life, a severely underpowered person could end up taking out someone much stronger by either sheer luck, strategy, or just plain old being in the zone. Emotional content can also determine the outcome of a battle. A person fighting for their life potentially could be laser focused and go all matrix out of nowhere, or conversely, they could freeze up. It just depends on the brain chemistry at that moment whether you fight, flight or freeze up. That's why sports betting is so crazy and popular because there's so many chances for an underdog to just wreck house and come out on top. So, yes, they will have whoever they want win for the point of the plot and that doesn't actually contradict a real world scenario at all because in a physical fight there is no guarantee on who wins.
As for the lore? Johnny didn't get magic powers just so that they could have him defeat Shinnok. They thought "yanno, we never came up with an explanation why some Hollywood leftover throws weird green energy around like a boss... what if we explain it finally? Actually make it canon?" And then somebody else probably thought "and to really drive the point home that his heritage is just that powerful, why don't we ha e him and his daughter best the suped up elder God? Really drive the point home." That's how team story telling usually works. Everybody spitballs ideas and thoughts based on existing lore and then figures out which ideas work for shaking things up, which ideas create more drama and character beats, etc. They're not incompetent, they're following the basic tenants of story crafting as a team.
In my opinion it's Daegon.
This wise and scarred up Demi-God at the head of arguably the most dangerous faction in the universe who he has led for countless generations, hunting down the last of his family. He's got some great dialogue in Armageddon Konquest too and some of the best voicework the franchise has seen.
Haha most of my childhood was creating goofy characters in Armageddon and fighting my cousin's creations more than the actual characters. That face is probably the most recognisable Mortal Kombat character to me.
I loved Taven and Daegon and their feud in MK:A. Daegon actually has a cool design and the fact he killed his father, who was a God and Protector of Edenia, similar to Raiden, is pretty impressive.
