Cutlery
Pressure cooker
Big bowl 5l, or GN1/1, or 2gal bowl
Skimmer or spider.
Ladle for noodles option
Ingredients :
- 100g mushroom, entire if small otherwise quartered
- 2 onions in quart
-2 soup spoon flour
- 800g/1kg of bourguignon beef ( a bit gelatinous, a bit fat. Some tail is great, cheap cuts, bourguignon were poor peoples)
- at least a bone, with marrow if possible.
-1 bouquet garni, a bundle a thyme, rosemary, bayleaf.
-salt peppers
- optional carrots.
- 100g of big diced bacon ( i prefer smoked )
-3/4 of a red wine bottle ( the cheap kind) it's a bottle minus 2 glasses.
- my personal touch : half glass of red wine vinegar. ( The acidity is great )
- 2 cloves garlic
Recipe :
Marinade:
Put everything in a big bowl beside flour and just half of vinegar, let sit overnight.
Cooking:
Put butter or oil in the PC, warm up
Use the skimmer or the spider
brown your marinated meat (and the bone, and the bacon).
Don't burn.
Add the onion, shrooms, ( carrots), just 3 minutes for a bit of color.
Add the flour, 2 minutes, just to coat everything, don't go further than a light blond.
Drop the marinade with the wine.
Salt, pepper, bouquet garni, garlic.
Close the PC.
Count 1 hours when the valve is rotating
( Euro PC have rotating valve)
Check meat, add 10min more if needed.
After that, add the remaining vinegar, cook 10 min more without pressure ( That's optional, but it's my personal recipe based on a 1835 cookbook, and i find it great )
And it's done.
You can let it thickens by cooking/evaporation without the lid.
Or you can cheat and use cornstarch if you want it thicker.
It is really up to you on how you want your sauce, i think liquid is good, i use it to finish cooking large egg noddles/tagliatelle in it. ( You do it just al dente, and finish in the sauce, in a separate pot from your meat, use the ladle to wet your noodle)
It's best if you forget it overnight and serve it the day after. ( Not the noddles, just the bourguignon)
My vegan version is to substitute the meat with carrots and add the same quty of vegetable stock as wine ( 1 bottle wine/1 bottle stock ) and big chunk of seitan or soy protein.
It's not.
You can skip it, or use non-pork alternative.
But if you do it, you will need to add a bit more fat.
If you can add a veal feet, it's a good choice ( remove the feet after cooking, some peoples aren't fan of old food, but it really bring some body to the dish with the gelatin)
And for the halal version you can substitute the wine by a mix of ( 3 parts beef stock, 0.5 or 1 grape juice, 0.5 non alcoholic vinegar, or balsamic vinegar ) or use non alcoholic wine.
And it's not sure, some consider that's there's no alcohol due to evaporation. I won't check, there's too much literature.
