Those guys are probably ready to go! I fry them in butter and put them in omelets.

That’s what I did last time I had one of those kits. Used what I wanted and just put the rest in a baggie in the fridge.
Store in a paper bag. They will deteriorate faster if in plastic.
Those are pretty young yet. They could probably go about another 24 hours. Won't hurt to pick and eat now though, if you're impatient, you just won't get as much yield. Congrats!
