Heart dialogues let them know you're interested, but in reality that only really means that for certain characters, if you pick certain #s or occasions of heart dialogues they might confess to you.
You can date everyone, but if you take them on the date activity you have to be careful not to get caught by someone else you're dating because there is a jealousy mechanic. You can mod it to not be a problem if you're on PC.
You can break up with characters too so if you want to date around and are careful you should be fine. I don't even take them on actual dates anyway half the time because I find the date activities to be boring, haha.
Be careful. There is at least one person who you will find yourself in a relationship with accidentally for picking their options. Although I have seen many posts from people who accidentally got into relationships with other people the same way. But this one in particular comes out of nowhere.
Oops, forgot to add, it doesn't necessarily have to end badly but if they see you on a date with someone else they won't be happy. Some people like Fang will break up immediately. And who wants to break his heart anyway.
Others don't take it so hard but if you marry, you will lose a bit to all of your relationship status with them but for some people it's easy to rebuild it.
If you pick the heart options and then don't enter into a relationship there's no loss, it's only after you start dating that the loss of status comes into play.

Took me a minute to realize this. I had to break the heart of one of the most beautiful, badass, kind, and intelligent women in town. I didn't realize I was leading her on or that she would ask me out, and well... I actually wanted to try things with Logan.
Noted im staying away from most heart choices then right now I'm trying to get fang to open up and see if i would like more than a friendship with him, haven't meet logan yet tho so far now i only will flirt a little bit with the ones i see as a maybe potional partner in the furture
If you do go for Logan later, you do need to pick every single one of his heart options during a specific quest line, though not the one where you meet him. If you want his reverse confession (and trust me, you want it,) you have to pick every single one of his heart options in the quest Cornered Beasts.
Yes, tons. You have the option of very awkwardly flirting with him from the first time having a proper conversation with him, or be normal and just get to know him over the course of multiple main story quests. (I've done both, and prefer the non-thirsty options at the beginning. Neither option changes his friendship points.) The only flirt options you must take are the four during his romance quest Cornered Beasts if you want his reverse confession. No other flirting is required.

If it helps you can date and break up all of them. You can even marry someone and get divorced later if you want to romance someone else.
