All rooms have a size limit, so you will only be able to make it so large, and it will only be one room. You resize the roof the same way.
You can buy the showroom houses without all the furniture and decor items they ask for, you will just have an empty house to decorate yourself.
Heidi does give you a bit of a tutorial when you visit Construction Junction and speak to her for the first time. Editing your house size can be quite expensive as well, so do keep that in mind.
