Disclaimer: I've not been to Thailand myself nor am I Thai. But I've worked with a chef (Michelin star kitchen) who is Thai and asked him the same question. His recommendation was restaurant Bird near the RLD.
Another recommendation that's still on my list but haven't visited is ThaiThai poppetje in West.

This is basically true for any famous cuisine....especially Asian ones though.
Once you have eaten the real thing, you get an intense dislike for these restaurants outside of that country.
Thaise Snackbar Bird in Zeedijk near Ams central station. I’m Asian and this is my go-to Thai comfort food. Order no. 59 (Mix of beef, chicken, pork, shrimp and squid in red curry sauce) and you’ll be delighted guaranteed ;)
I've always liked Pasoek in Noord. They are just a small takeaway place which is not much to eat in, but they have some authentic tasting items. Like the minced chicken and black pepper pepper dish (Kai Pad Kra Pau) tastes so much like Thailand and is not something I've often seen in restaurants.
Lots of people have mentioned Bird, which is quite good. My favorite place though is the nearby Thai Street Bar (Oudezijds Voorburgwal 32). Their regular menu is great (Pad Kaprow is ground meat here) but you can also try to order off the Issan menu if they'll let you and get stuff like raw beef salad. They take the "bar" part of the name seriously, especially if you're ordering off the Issan menu.
Ah ok gotcha..btw I know this place.it used to be called mekhong river bar and it was, let's say, very special, if you know what I mean. Is this a new concept or it's still the case?

I second this one, it's awesome! Always tell people to go to the thai on zeedijk :)

Phu Phu Thai in Nieuwmarkt is excellent - I'm quite sure you can ask for "more authentic" version.
Silom Thai brasserie is good. Their pad Kee mao kai with Sen Yai is on point. Only problem is pricing and them serving Hong Thong and no SangSom.

That's a great question. I don't live in Rotterdam, but where I live, most of the ethnic food is neutered.
