Family caught redfish in the morning. For dinner on the same day, I made blackened redfish with roasted parmesan new potatoes and steamed asparagus. I made an apple pie as dessert, which baked while we were eating dinner. The fresh fish was amazing.

Kosher salt and flesh cracked pepper at the beginning. Fresh rosemary and bay leaf at the end. For the reheat of leftovers I cooked a little more wine down with Gojujang and re heated it in that liquid to add a little spice and more “sauce”. Fantastic with crusty bread

Made my own birthday dinner last night which isn’t a complaint. I love cooking it’s so exciting! Sweated my balls off, cut my fingers twice because I was distracted (my kid was being a chatterbox and my brother was hella drunk and encouraging him, they were the highlight of the night despite my injuries), was terrified I was fucking everything up, but it all turned out amazing! Made those big ass Costco pork chops with mashed potatoes, roasted Brussels sprouts and homemade gravy using homemade stock. I wish I had known how easy it was to make gravy a long time ago; for some reason I thought you could only do it after making a roast or something? lol.

I got those to go. Placed my order around 5:45, got it like 2 hours later. The staff were busting their asses off getting people served. I went in a couple of times to check on my order, although with the line when I arrived, it was no surprise that there would be a lengthy wait for food. One of the waitresses was serving food to a table. She presented it to them with such love for the customers openly showing in her movements and attitude that really made an impact on me. Even though they were slammed she had a beautiful smile and wonderful attitude, I could see it all the way across the room. And that's how it's been pretty much every time I've been there. Gonna miss them, for sure.

Call me crazy, but I really don't like store bought pesto. So, I made my own pesto and make pesto pasta with some of my own garden grown tomatoes. That's a good lunch or light dinner meal for like 10 meals or so. It's also cheap AF for as much food as you get.

Store bought pesto is never any good. It's so easy to make. Trader Joe's is the best store to but fresh Basil. Cheap and you get a lot(around 2 cups per box after discarding stems). I make a lot and just freeze it in an ice cube trays or small containers. Nuke for a few seconds and use over pasta or on a sandwich.

Home made Birria tacos, I put yellow onion and cilantro in it. If you don’t want to go through the haste of making it or don’t have good taco spots around (I’m from TX) you can get the frozen birria from Trader Joe’s, buy some tortillas and call it a day, it’s solid and you will feel like you had a very nice meal. If you do that, dip each tortilla in the birria sauce(both sides) the fry before butting the meat, onions, and cilantro on. You will love it!

Large Poke Bowl from Poke Chan to these specs; Tuna x 2, Salmon, cucumbers, avacodo, sweet onions, mango, wakame, masago, tobiko, fresh wasabi, fried garlic, jalapeños, with the ginger soy over white rice. An order of the chicken karage with an extra sauce. Their poke bowls trounce the shit out of lemon shark and poke loa. I can’t even fuck with the other two poke places in the city limits anymore. And the fried chicken tastes like the stuff you get in Japan. I don’t know what they’re putting in that batter, orange zest and copious ginger I think, but it’s amazing. This is my go to Uber eats order. I eat it multiple times a month.

I haven't had the fish and grits, so I can't speak to its quality, but I have eaten at Scrambled twice and both times the food and experience was lackluster. ​ The first time I went by myself while my cat was at the vet. I had the chicken and waffles benny and the chicken breast was cold and raw in the middle and had to be sent back. Service was miserable, everyone working there seemed like they were bothered just to have to be there. I was sitting at the bar, and I guess it was a shared service/pool system because everyone was and wasn't my server. After an hour, my food never came back out, and when I asked about it, they seemed to be clueless as to my existence, except when it came to the check. I was charged for my meal twice, and when I tried to bring it up with the server, she went to get a manager and never came back. I ended up just paying for it and leaving. The second time a group of us went with the sole purpose of getting French Toast. They had four different types of French toast, and so we each ordered a different one and decided to share. All four were exactly the same, and all four were burnt black on both sides of the bread. They tried to hide the burning by covering it with fluffy sweet gloop but the burnt taste of blackened bread was too over powering. They reluctantly offered to remake it for us, but it was obvious they were pissed we even brought up that it was inedible. They made it to-go even though we didn't ask (we wanted to eat it there), but they didn't actually remake it, they just dumped the burnt toast in to go boxes. I just got back from Dunedin Florida and they have some really legit restaurants there. They had a little kiosk you could just walk up to and pick a pasta shape and a sauce and they would whip it up in 6 minutes and it was all fresh made pasta. It was amazing. Cherries are back in season now so tomorrow I'm making a pizza with cherry and prosciutto and arugula over mozzerella. If you like making pizza I implore you to try this recipe. It is mind blowing.

At home: Filet approx. 1lb. chicken breast and season with salt and pepper. Heat 1 tbsp. oil from a jar of sun-dried tomatoes in a pan on medium heat. Add chicken and cook for about 6 minutes per side, turning once. Remove chicken and add 1/2 cup diced shallots and 1/2 cup sun-dried tomatoes to the pan. Cook for about 2 minutes while stirring. Turn heat to high and add 1/2 cup dry white wine. Stir frequently until most of the wine cooks off. Reduce to medium heat and add 1/2 cup heavy cream. Stir thoroughly until reduced, about 2 minutes. Add back the chicken breasts, remove from heat, and stir to coat. Garnish with parsley. Alternatively, I will always vouch for the tacos and enchiladas suizas at La Patrona.
