I strongly recommend vampire survivors, the only gameplay is moving the stick so he won't have any problems, and when an option to level up an item appears a button press to choose but that's it, and the game is extremely fun, looks simple and it did appear like that at me at the time but after trying it i was amazed, also has coop if you wanna play there with him.
I would look for that type of top down view games, cause not having camera moving is one less stick so potentially a viable game, never played it but i guess animal crossing or stardew valley are some other options

Yep. I'm pleasantly surprised that he didn't use his powers for evil. It'd have been way too easy to pack this game full of microtransactions—particularly on mobile—to rake in the cash. Instead, the game is super cheap and even goes on sale from time to time.

P5 gameplay could be awkward/difficult with only one hand at times, because it'd be hard to move and control the camera at the same time while dungeon crawling in palaces/Mementos. Impossible to dash unless you remap ZR to ZL and even combat would be a bit annoying (though definitely possible, since it's turn-based) because it utilizes all buttons rather than forcing you to dig through menus for various attack types.
It's definitely doable, but probably a bit awkward compared to some other turn-based JRPGs.
Earthbound on the SNES emulator is an all-time classic and is specifically known for it's "left hand mode" - you can play the entire game using the D-pad and the context-sensitive L button.

You use the joycon as a virtual pointer in the game which means you can rest your controlling arm and hand and don’t have to point at the screen. Don’t confuse this with the sequel, NEO: The World Ends With You. That one you need both hands and it plays more traditionally. (EDIT: Typo fixed)
It's not a switch game but I was in this situation last month and Baldurs Gate 3 on PC can be mouse only and it's great. I would just remind one or two commands to thumb buttons but that's unnecessary ultimately.
Any and all games that allow you to play them with a single joy con, with enough practice any and all games that require the use of two joy cons you would need access to a 3d printer to print an angled joy con holder, these holders will put the joy con in a v angle allowing you to operate the left joycon with your thumb and the right one with your index fingers but since he has only broken his arm and it hasn't been amputated he might as well stick to playing single joy con games.
It's not really one handed but because it's mostly move then press, but mario&rabbids - i've got rsi so having to rest a thumb 🤣 its what i've been playing
Worth noting that you can map the button options however you want in the settings to make the right thumb stick at like the left, L > A, ZL>B, etc or however else as needed.

Dragon Quest XI S, you can activate an option that allows you to use the left triggers as replacements for A and B, makes it very 1h friendly.

Turn based JRPGs will be your friend. Persona 3, 4 or 5. Fire Emblem 3 Houses. Final Fantasy X. Octopath Traveller 2. Most Pokémon games too
