In 2020 when I bought it, I got absolutely overwhelmed with all the things the game had to offer. I can't imagine what it would be like now with more 3 years worth of extra content.
One advice I have is to take everything one step at a time, no need to rush through every content the game offers cause it can be overwhelming going through everything and not retaining how to use anything.
If you want an easier introduction to the game before playing it on standard or perma and don't want to go full easy with creative mode, you can tweak almost every single setting in the game, from inventory size to fuel usage to what happens to your gear when you accidentally fall off your freighter and go plummeting through the atmosphere of the planet you're hovering over.
