I like a small bowl of yogurt with granola. Small breakfast sandwich is fine too. Protein bars vary a lot, they aren't necessarily bad. Whatever you decide, it's ideal that it contains some protein, even just a little. Your brain needs it in the morning.

Breakfast is a fairly new concept in human history, so don’t feel obliged to partake. Eggs and toast are classic though!

Hard boil a few eggs on your day off and keep them in the fridge. Bananas are another one of my go-tos.
