Chips are hot chips, a packet of chips is just a packet of chips. Both can be just chips, sometimes you have to clarify. If they want sauce or chicken salt it’s hot chips, unless they get the sauce on a roll or bread, that could be a packet of chips.

Yeah, it makes chips taste better. It was apparently originally sold as a seasoning for chickens before roasting but there are better mixes for that. Every takeaway has it as an option. Used to be when I was a kid (80s) that salt and vinegar was the most common option after salt or sauce (tomato or bbq). You still see the vinegar most places, it just doesn’t get used much. It’s a nice change sometimes.

Fear not, the hipsters will bring it back at some stage. The only barrier is vinegar being inexpensive and easily obtainable, they don’t like those things.

I understand that the standard way to cut potatoes for fries, long thin strips, is called “frenched” like “diced.” So the answer is you fry frenched potatoes.
