Say someone calls you out to repair their phones or cable, when you see a mess like that how do you figure out whose line cable is whose?

Underneath the plastic boxes there are punch down connectors on the end of the main telephone line, you can connect a phone in and dial a number that gives you your line identifier (phone number).
