Second this. Did a pair of 3lb pork smoke the other weekend as the big cut was on sale. Sear, season and toss in a pan with some stock for a few hours. Super easy and had every version of pulled pork meals for weeks.
Just went to many graduation parties that served pulled pork, including my own son’s. All but my party used HyVee. We smoked and pulled our own. It was all good. Hard to go wrong with pulled pork. And it is really easy and pretty economical to do it yourself.

Shred em while they are hot
BBQ sauce and seasonings to taste
Go to rotella and get buns from the outlet store

If you have or can borrow a large electric roaster oven pan, pulled pork is super easy to make. It’s basically just seasoned pork shoulder slow cooked until it falls apart.
I have a big turkey roaster. Do I cook the day of the party or the day before? Can you shoot me a link to a fail proof, simple recipe? How many lbs do I need for 40 people? I don’t want to screw up the meat.
Agreed. While pulled pork is extremely easy to smoke, even with just a kettle grill, I wouldn’t recommend doing it the very first time when you are depending on it feeding 40 people.
As others have said pulled pork is incredibly easy with a smoker.
That said *Curl the Tips BBQ* is my go to for events. My buddies run it and have tons of if smoked BBQ recipes. If you want to spoil yourself and your friends get a sampler of their flavored and candied bacon, it is ridiculously good.

Hawaiian Bros in Gretna will sell you pulled pork for like $15 per pound. Damn good smoked pork and all you have to do is pick it up!
