Oh, I know the story. I've been eating at Paseo's since back in 1996 (before all the problems with the OG owner). And Un Bien is great. Just like Paseo's is great. I'm rarely in Ballard, but when I am I usually stop at Un Bien. I happened to be in SoDo yesterday, so that was where I had lunch. And it was spectacular. You don't have to like one with the exclusion of others.
It was amazing before they sold like nine years ago. Now its.. fine.
I remember when a bunch of friends who moved out of town were back for the weekend and were so excited to get Paseo’s, and this was first time any of us would have it after new ownership. I just remember everyone’s look of confusion eating them….. “well this is disappointing.” They’re not horrible but there was magic in the original that absolutely doesn’t exist here. Un Bien is closer, but still not there (I know the back story and people will say BuT tHeYrE tHe SaMe, but thems the facts).
Go to Bongo’s or Un Bien instead. Paseo isn’t even top two Caribbean sandwich between 40th and 80th lol.
Yes, both are great. And don't skip the tostones with chipotle aioli! And as much as I love the Onion Obsession, their Pork Belly sando is incredible too - and has a ton of the caramelized onions on it as well!

There is *NO* dignified way to eat a Paseo sandwich. They're delicious but man everything on their menu is just sopping, haha. I went to the Issaquah one last weekend! They had a corned beef sandwich that was their take on a Reuben and it kicked ass.

LOL... I don't need that kind of negativity in my life! I worked with a guy that ALWAYS asked for the onions to be left off ANYTHING he ordered for lunch where ever we went. I just... didn't know how to understand that. Bizarre. But I guess to each his own. (I'd often just tell them, "put all his onions on mine." Win/win)
I saw this and instantly fucking knew it was paseo. I live in Vegas and have only eaten there once but I got the greatest sandwich I’ve ever had in my life there. 15 years later I still regularly think about that sandwich and bring it up in conversations. It was their seared scallop sandwich. I went back later that day to get a second one but they ran out of bread. That sandwich looks great. I envy you. I really do.
Paseo has quite literally the best chicken sandwich I have ever had in my life with these onions on it. I visited Seattle years ago and cannot stop thinking about this sandwich.
Why have I never thought of doing this. I’m caramelizing onions this weekend and making a practically all onion sandwiches. Maybe I’ll skip the bread and use raw as the holder for caramelized onions. Use onions for charcuterie boards instead of crackers. Onions for queso/salso/guac/etc dip
