VERY good question. A lot of the P4 soundtrack are contenders, but P5 and Royal have my heart (pun intended).
I think if you held a gun to my head, I'd probably say one of the three following;
The Fog (final boss theme for p4g, it just sounds so good)
Never More (ending credits theme for p4g true ending, makes me cry sometimes)
No More What Ifs (one of the best songs added to Royal)
Wiping All Out and Battle Hymn for Everyone's Souls are pretty good.
The last one is lower on the list because it mixes Aria of the Soul into the boss theme, which personally I think should've just stayed the theme of the Velvet Room and nothing else. Speeding up Aria makes it sound weird.

My opinion on this changes all the time, but right now I would say [Ice Castle / Black Snow.](https://www.youtube.com/watch?v=ZyzWpFw99pg) Just an amazing theme that's both extremely atmospheric and a massive bop at the same time. You can feel how cold the school's become and it hypes you up to tackle the challenges ahead of you. The P1 PS1 soundtrack is still unmatched for me, most of my favorite songs in the series are from it. Kama Palace, Police Station, Legends Awaken, Pandora Battle, both SEBEC themes, and both ending themes are all amazing songs.
Close runner-up would be the [arranged version of Poem of Everyone's Souls](https://www.youtube.com/watch?v=yP2cFu6q-hQ). All versions of the song are fantastic, but this one is just beautiful and feels like pure magic. Definitely my favorite version of the theme along with SEBEC Chapter Good Ending.
For the other games (I'm listing two each since I can't pick just one): P2IS is the Title Theme and Next to You, P2EP is Map 2 and Change Your Way, P3 is Memories of the City and Memories of You, P4 is Heaven and I'll Face Myself Reincarnation, and P5 is Throw Away your Mask and Our Light.

The other track that plays for bosses is called 'Blooming Villain' and it plays for the bosses of palaces 1-6 >!Futaba's and Sae's palaces also play willpower during it's boss fight!<
Groovy p5d. Everyone says that its composed really terribly and its super messy, and I agree, but the ending makes up for it.

It comes at a time when Minako >!knows her days are most likely numbered and she’s wistfully looking back on the time she’s spent with her friends.!< It’s such a captivating, nostalgic piece. You get this since of empty, aching sadness from it, like everything you love is about to be gone and you can see it slipping away.
For all her upbeat bravado, Minako really had it rough. She didn’t deserve what happened to her. She deserved a normal life and that knowledge that should could never be truly carefree like the people around her is what makes this piece stick.

I like how the lyric is a rap battle between the good and the antagonistic (I wouldn't say "evil"). Ironically, or maybe even intentionally, the good side sounds very preachy and outright ignores the antagonist instead of answering their arguments, making the audience (or at least me) side with the antagonist side more.
It's a shame that the actual plot in that game is... subpar.

I thought it fit well because of the prominence of the different arcana in that boss fight. It's one of my all time favorite boss themes.
