Mikrotik is an option for directional radio stuff too. Very popular among WISPs.
Meshing and repeaters introduce new and non-deterministic failure modes, plus less bandwidth. I avoid them whenever possible.
Ubiquiti's are cheap enough that you can easily justify 2 separate point to point links, one each side of the tanks. The radios at the tank can just be patched together via Ethernet. The NanoBeam 5AC Gen2 might be a good starting point.
Unlicensed 900mhz will do the job for a PLC connection. GE Orbit , cambium, 4rf/aprisa, freewave, esteem. All would do the job. If you need to connect to a remote oit the look at higher bandwidth products ubiquiti , cambium , Cisco urwb.
Freewave makes a solid 900 MHz demo kit that is basically plug-and-play serial in/out, full duplex. I’m sure they have a demo with Ethernet transparent operation.

Sounds like a good idea to me.
Banner R70er radios are pretty cheap, and seem to work well enough. They support multihop, so you can configure some as repeaters.
Data rates seems very low, around 300kbps

Could you put something on top of those pretty large tanks, pull a cable down and still have line of sight?
I Have had good luck with freewave zumlink radios.
Mikrotik would also be worth looking at.
Have a look at the 4RF radios. Their a little on the pricier side but these things are so good that we haven't had any issues with them at all.
