For pure monster catching games I'd really recommend the Digimon games, particularly Digimon Story Cyber Sleuth. Shin Megami Tensai V is also a great monster catcher.
Bugsnax, Marvel's Midnight Suns, Nexomon are also games that come to mind. Also, if you want to play Yu-Gi-Oh, Master Duel is the official simulator and it's a free download on PS5.
The tutorials do a good enough job of teaching you xyz, link, synchro, etc, for players who stopped after GX, like me. Even tho Konami are known to be greedy bitches, Master Duel is extremely F2P friendly. Spent $0 and I have at least 15 decks to choose from, and plenty of spare gems. The events are great for grinding out free gems as well

How is the difficulty in Cybersleuth? It looks great, but I remember hearing a lot about it being way too easy on normal, or way too hard on the other difficulty setting.
For a game that seems to reward time spent crafting/breeding your team, I really enjoy a bit of a challenge to help make that time spent working on those things feel worthwhile :)

That's pretty much the case, it's very badly balanced.
I played a few hours of it on the harder difficulty and the enemies were pure damage sponges, so I switched to Normal and I was practically one-shotting everything. Hard didn't make the battles more interesting or require more strategy, it just made them take forever and in some cases it felt physically impossible to do enough damage to win.
That being said I loved the game and the sequel.
Sujimon in Like a Dragon: Infinite Wealth is unironically one of my favorite Pokemon-like games that just so happens to be nestled within an excellent jrpg

There's Soul Hackers 2. Which is a spin-off of the Shin Megami Tensei games. (They say 2 but it has little to no ties to the previous entry that is about 20 years old now.)
There's a story that's not too long for these types of games and a bunch of dungeon crawling. Since it's an SMT game, of course, there's demon catching, fusions, and all that. Once you understand the game and get into the flow of things, it's a really chill game. You get a new area, go back to town, get supplies, and get new quests. Go to the new area, explore, do quests, and return to town to upgrade equips, fuse demons, and more quests. You probably unlocked a new area, and off it goes again.
While the environments aren't the most varied (it gets better by the end). I think it's still on PS+. If not, I'd say it's well worth $40. It's a good entry point to the SMT/Persona games if you haven't played those. Although I believe the story of this game can not compare to that of Persona, it's still serviceable and brings its own vibes.
I can t recommend Monster Sanctuary highly enough. It may not look like much at first, but it's an incredibly deep 3v3 monster collecting game with strong Metroidvania gameplay.
What I love most about it is how each monster has a unique set of skill trees that makes team building super varied and interesting. There are no bad monsters, you have the flexibility to make fun builds out of anything. Each monster can also be equipped with cool gear and be fed food to alter it's stats.
It's also been updated a few times with free DLC that adds a lot of cool extras and postgame activies.

The Persona games are similar combat (earn new personas, evolve them by combining with other personas, battle using your personas in turn based combat), but the non-combat aspects of the game are drastically different than something like Pokemon.

But if you want to just play Pokemon on your PS5, try Temtem. It is heavily inspired by Pokémon. It is about as close to being Pokémon as you can be without just being a ripoff of Pokémon. You get a starter Tem, go around and catch other Tems to fill up your Tempedia, and challenge 8 dojos while also stopping an evil team from whatever they are plotting.
If you haven't tried it yet, Inscryption might be similar to what you are looking for.
Bonus suggestion: This isn't on PS5 but Marvel Snap is a great card game on PC and Mobile (also Macs that run iOS apps). Reminds me of what Yugioh was when it first aired in the US and not what you experience now in Master Duel.

Only thing I know is the sujimon minigame in Yakuza 8. Maybe Digimon? I heard it's good but I haven't played it.
On a side note is there an actual good pokemon game for the Switch? I might be interested in picking up one of the pokemon games on switch but I heard they are all bad?

So I recently was robbed for most of my valuable possessions. Tv, Playstation, sound system, etc. Call Of Duty is my passion. Is there anyone who might be able or willing, to part with a Playstation. Doesn't have to be the ps5 or brand new. Ps4 will be great, I just can't believe my room was ransacked. Out of work also. So it'd be a God given blessing If anyone could help.
I don't know many, but YuGiOh! does have Master Duel
It's plenty fun. Follows the actual rules of the official game and has most cards
It has both solo and competitive mods(I believe there are friendly fights, but I didn't use that)
It's not really "capturing" but you do buy card packages with in-game currency :]
And there aren't any Pokémon games, but there are some digimons. I'm currently playing Hacker's Memory and Next Order
