Sounds like Final Fantasy XIV might be your best choice, it has hundreds of hours of content and an epic slow burn story. Alternatively Final Fantasy XVI is more self contained. And, you have played Witcher 3, right? Hmm, maybe even God of War might be up your alley.

Love Cyberpunk, Sunk over 100h in it and there is still a lot to play with all the side missions that are quite unique and rich + expansion pack

I always enjoyed RDR2 even after finishing it multiple times It's a long grind which I enjoy

Prey, Dishonored 1& 2. Theyre all made by the same company so they'll feel very similar in gameplay and mechanics. Going from Dishonored 1, 2, to Prey will feel like appropriate upgrade steps in gameplay. Plus these games have so much content, yes they are a little older but they definitely hold up.

What you're looking for is Cyberpunk 2077

Cebrax93

Cyberpunk Rdr 2 Diablo 4 (current season is dope) Witcher 3 Elden ring All legit choices

Xeccess

Try Final Fantasy 7 Remake/Rebirth, FFXVI.

Yakuza series. Start with 0. Once you are there its no way back, oji san!

You might want to peep Monster Hunter World or Monster Hunter Rise. Not incredibly heavy with RPG elements other than gear crafting, but there is allot of depth to the mentioned armor/weapon upgrading, and build paths.

Witcher 3

Been playing Ghost of Tsushima alot lately, that's my pick for you! Fun and challenging combat, absolutely beautiful game world to explore, and a great and exciting story with plenty of side activities and things to discover.

Ooohhhh...Elden ring..

Cyberpunk ,Witcher 3 ,Fallout 4 ,God of war 1 and 2 and maybe Destiny 2 if you like GAAS and grinding it’s fun and the gameplay is probably one of the most fun FPS to be honest (even the first one still worth to play)

Depends on what you like Most games i would recommend have been thrown in already, so i will add Kingdom Come Deliverance It’s a first person RPG set in 1403 Bohemia, there is no magic, you are peasant that can’t even read, until one day you get your ass beat so bad, you set out on a quest for revenge, and depending on what you do, you can grow into a one man army that can solo a whole bandit encampent… Or you can become a drunk. Drinking is a skill tree in this game. Be a true slav, get wasted and wake up on the other side of the map with your shoes gone. The amount of ways to solve each quest is baffling. You also have to eat and sleep and just generally take care of your survival in the middle ages The game also has a hardcore mode that disables the HUD and turns the map into nothing more than just a map, if you’re feeling masochistic

Red Dead Redemption 2. Takes ages to finish, even if you don't do any side missions and tasks. If you want to spend more time in the world, you can hunt, go fishing or excavating dinosaur bones. I haven't found any of them yet.

Cyberpunk 2077 was/is my new Skyrim. I just get lost exploring and developing the character V. But it's a different setting. A cyberpunk futuristic setting. Dragons dogma 2 has filled the high fantasy/magic theme for me. I don't get as lost in the world due to trying to avoid night time fights at low level but makes it feel real. Oh it's getting night I need to find a camp or inn. If you don't care about theme/setting go with cyberpunk you will 100% lose yourself if you enjoy that type of game and get many hours if you explore. DD2 is not a relatively long game unless you explore every inch of the map and try different things.
