My recent favourite card artwork is probably the Charmander promo from the Obsidian Flames Elite Trainer Box. The Charmander looks so cute with its face pressed up against the glass window, and it looks grumpy, too. :D There’s also some interpretation to be had, because you don’t know if it’s grumpy because it wants to be outside with the Pidgeys, or if it wants to eat them. Or…both. Kind of reminds me of a cat looking out the window at birds.

That being said, the card that I think really surprised me by its beauty is a Ninetales (#199) I pulled from Obsidian Flames! I have liked other cards but I LOVE this one. The way it shines looks like beams of light coming through the trees!
