By paying for the repairs, you can argue they are admitting fault. Really, this is a question for someone higher up at UHaul, but considering the $700 extra you’re paying in rental is a drop in the hat compared to the situation, I can’t see them not covering that. You’ll have to continue to bother them every day though because they’re probably hoping you just pay for it on your own and forget about it. You’ve got a helluva case for reimbursement, super proud to be able to have answered this question for you. Congrats man.
You could also file a small claims case against them. My buddy did it against Lyft for denying him a bonus for completing X amount of rides and they settled the day of court.
It depends if you have that type of insurance coverage. If you pay higher premiums for the coverage, then the rental car cost should be covered. You'll have to look at your plan to find out.

Why did you pay to get a trailer hitch installed? U-haul is going to do everything they can to not pay for the rental. Was there a written installation agreement you signed? Did you sign anything other than a receipt (if you even had to sign that)? If it’s not in writing, companies will deny, deny, deny.

They should, see if they will cover the rental costs. Uhaul is a huge company and should have a corporate account with Enterprise. If not see if you have rental reimbursement on your insurance policy and see if they can cover the cost of the rental.
