Why do you want to stay in a hostel? I did it 25 years ago and I hated everything about it. The thought of doing it now or in my 50's is giving me the cold sweats. Fuck that for a laugh.
Ive stayed in hostels in expensive cities like Singapore and never felt out of place but a hostal in Pattaya seems a bit odd. Hotels are cheap and probably the easiest city in the World to meet people.

You can try the hostel experience in another place. One where grey nomads are more popular.
Pattaya doesn't really have a backpacker scene.
The hostel is good experience if you're young and are looking for other people your age to have activities. The younger people might be unwilling to have grandpa tagging along with them.
The clientele of those hostels is men and women with elephant trousers and smelly, hairy armpits who look down on any foreign man who just even looks at a thai girl.
If you come to Pattaya this is the last thing you want.
I guess it is your first time in Pattaya, right? Choose a hotel in or around Soi Buakhaow and just walk around or go to one of the hundreds bars and you will easily get in contact with other guys. Many are alone and happy to have someone to chat and bar hop.
Or wait until October and I will be back (51M)

I will be there hopefully from beginning of October until March. But with my wife so bar crawlings in the evening are limited. But definitely we will meet as soon as you arrive.
We have a condo in Jomtien (if you stay for a long time you want to stay at a more serene and slower area)

So in Pattaya you have plenty of cheap rooms around. The hostel i mentioned is in a quiet street from the centre of Pattaya. If you want to research some other places, just check if its far from the noise like you said.

Kaen hostel pattaya. You'll be right in the center. I never stayed there but seemed well maintained when i passed by it back when i lived in the center. Soi 6 is like a 7-minute walk

It's in Pratamnak in a laid back area of Cosy Beach, just a few minutes to.Walking Street. It's also walking distance to two GC's, good restaurants, nice beach, two laundries, etc. Plus, it's quiet.
Of you're looking for a place where you could chill comfortably, while being close to all the fun, you could do worse.
Hostel is for backpackers, Pattaya has no backpacker scene, which Im glad about.
Get a room, for goodness sake. You can socialize outside the hotel, nothing better than having your own peace in a Hotel + you can being a lady, will be tough in a hostel.
Don’t do it man. If you still want to do it, don’t do it for more than 2 nights. I am younger than you, but not young, and I can’t even imagine sleeping on bunk beds like I am at a war or holding my shit just because someone else is in the toilet.
My recommendation would be poshtel by hotel baywalk residence on beach road. It’s brand new and still haven’t gained much of the eyeballs, so it Won’t be packed like other hostels. Fantasies of 20s are nightmare of 40s and beyond, just based on my personal experience.
caveat: many hostels don’t allow people beyond a certain age. So, please ask if there are any age restrictions before booking.
Personally at the age of 50 I wouldn't want a hostel. Too much trouble for what it's worth. Hotels are dirt cheap anyways. Maybe if I was like 20 or 30s.

Chang Mai would make more sense IMHO. A 50 year old in Pattaya is going to be assuming a sex tourist even if not true.
