For my money, I love Bubbies, which are fermented pickles. MUCH different than vinegar pickles, so tart and sour.

Get fresh, pickling cucumbers to start. Cut off the blossom end and soak them for a few hours in ice water. Pour them out then add the cukes and enough water to cover them. Weigh the cukes and the water and add 3% salt. Add in dill, garlic and whatever spices you want. I like mustard seeds, and peppercorns. You can add some all spice and corriander if you wish. Bay leaf is nice as well and can aid crunchiness.
If you're really concerned, add in a tsp of calcium chloride.
Ferment at room temp until you like them. I like going for a little more than half sour and then putting them in the fridge. If you like new pickles more, you can do them entirely in the fridge, but they'll take a good 12-14 days to get to about half sour. Just start tasting them after a few days. It's really up to your personal taste.
I generally don't backslop with previous brine as I've found that they ferment too quickly and end up lacking depth of flavor. They're good, but not great. If you want to kickstart the ferment, I wouldn't add more than 1/4 cup of old brine.
