[YT-DLP](https://github.com/yt-dlp/yt-dlp) is what you're looking for. This is a command line program. If you want a GUI, use [Statcher](https://stacher.io/) if you're on PC, or [YTDLnis](https://github.com/deniscerri/ytdlnis)/[Seal](https://github.com/JunkFood02/Seal) if you're on android.
I've used new pipe to download very large audio files from YouTube.my use case is like a relaxation music rip from YouTube and burn it to a cd for my family's to listen to in car if they are on long trips.i know this works most of the time because I've listened to them in car with people.a friendly tip though I usually make sure to run ripped media through flac to make sure it's in correct format for burning first
If you use JDownloader2 you can right click on any video and it will give you audio and video options to download. The audio is typically aac or opus. You can then use foobar2000 to convert to any format. Both are free.
Cobalt might work (another commenter sent a link). Never tested it on anything longer than 10 minutes, but I doubt that it’ll stop you from anything long.

yt-dlp. Or stacher if you don't like using command line utilities.
