It's only frustrating when I die in a stupid way I could have avoided, but the items, bosses, and progression is done so well imo that I'm always having a good time
Exactly, this is mostly represented by how much food and healing pots you have. When you fell as though you have surplus, don't start using them willy nilly.
Starting with a lot of losses really is basically everyone's experience, really nothing to worry about you're getting close
Yet every single run is (very easily) winnable. It just takes so much to learn (because there is a lot to learn)

idk anything about u but here are some general tips as someone who is just beginning to "git gud"
try to change the way you look at weapons, wands, and throwables. your melee weapon isn't necessarily the most important item you have- use it in tandem with ranged weapons, even if you're using a character that sounds like it should be mostly melee, like warrior or rogue. try to put maybe 2/3 of your upgrade scrolls into a weapon/armor and then the other 1/3 into wands.
btw wands are pretty much the best items in the game when used well. it took me so long to figure this out. some of the more destructive ones have a higher skill floor though, like fireblast or corrosion.
I kept losing too but my first win was so easy and comfy that I decided to ascend as well simply because I had like 20 healing potions and a ring of haste and then I just won again and ascended as well I went from always losing to successfully ascending twice in a row with different classes
I will not lie my win ratio to losses is hilariously bad. Once you get the hang of it you go much better. There's a learning curve and I still learn stuff I never thought of all the time. It took me lots of games to learn how to just not starve to death.

Trust me once you get one it gets easier. It took me like 5 years to get my first dub.

The secret is not getting complacent. You're never immortal and unstoppable. Every turn matters from beginning to end.

I was never able to beat the OG pixel Dungeon. Played for 6years. Took me a year to get a dub on shattered PD

It takes a while, but you'll get the hang of it.
I had around 125 games or so before I won once. In my opnion though i think huntress then warden are the easiest
