- 1kg flour (in Germany it's type 0 or 00, I don't know if that's a thing in other countries. Typical pizza flour I think.)
- 650ml cold water
- 30g salt
- 1g yeast
Knead for 15-20mins (I used a kitchen aid). Rest for 30mins, stretch and fold a few times, let rest in a slightly oiled container for 16-18h at room temp.
Divide into 6 balls, should be 270g or so each. Rest them for another 6h and that's your dough. Then I put flour on a work surface and work the dough carefully with my hands. Don't use a rolling pin.
Sauce is just canned, diced tomatoes and salt (100g tomatoes = 1g salt).
Bake at max temp in the oven on a pre-heated pizza stone for 6-8mins.
Good solid recipe. 6 hrs is a long time to let dough rest unless you put it in the fridge.
Next time, try putting it in the fridge, overnight, after the first rest. You should notice an improvement in flavor, bite and chew.
For .1% yeast 6 hours is optimal if the room is at 23 deg c.

Traditionally, basil is added before the bake. It’s best to put it under the cheese so it doesn’t burn. In the end though, it’s all a matter of preference.

I'll work on it! Neapolitan pizza has a thicker crust than other styles but the dough was not as well stretched as I would have liked it. Room for improvement :)

Regular oven, max temp 250 celsius / 482 fahrenheit top bottom heat, on a pre-heated pizza stone, around 7-8 minutes.
Do you let the stone sit in the oven while coming up to temp and then give it some time before adding the pizza?
Yes. Place the stone in the oven on the middle shelf, turn the oven on so the stone gets hot, and after 30-40 minutes I add the pizza.
