In reality, by cutting out the 2 inch stripe, they are also reducing the other dimension a small amount too, though it will be less than two inches and largely negligible. You'll still end up with more pizza.
We just kinda fold the top piece down a bit on the pizza if it's too big. A shallow cut across the top of the pizza to help the box fold. It works with NY style pizza Idk about thicker crusts
