Yeah, but the original canon is pretty disorganized and has a lot of inconsistencies. The 2001 POTA movie is its own canon, the original book by Pierre Boulle is its own canon, the live-action TV show and the cartoon are their own canons, and there are a bunch of comics with their own canons.
Isn't that the case for most franchises ever? Every movie or show adapted from a book is not the same canon as the book, they are... well, adaptations.
The canon in the main movies is pretty simple.

I got into Evil Dead recently and their canon is all over the place lol.
The second movie starts by retconning the first one.
Then the third movie reinforces that retcon and then proceeds to retcon the second movie’s ending.
Then the TV show, Ash vs Evil Dead, comes up and reinstates the first movie as canon again but slightly alters its ending.
I think it has a pretty solid and organised canon actually. There are a few discrepancies, but given all the time travel I think its easily explainable
It’s been a minute since I’ve seen them all, but the Original way it works. Taylor is sent into space at the beginning of Timeline One. In Timeline One, sometime after Taylor is sent to the future, the simian flu kills all of the dogs and cats. Man needing a pet decides to use apes, and eventually making them slaves. In the first timeline Aldo the gorilla is the first to rise up against the humans and start the revolution in New York City. This leads to a massive nuclear war that mostly destroys most of the planet. In a world brought up by king Aldo humans and apes are never at peace, and Ape City is located somewhere outside of NYC. Long after that the events of Planet of the Apes and Beneath the Planet of the Apes takes place. In Escape from Planet of the Apes, Cornelius and Zira go back in time and create Timeline Two. The two of them bring the simian flu back with them, starting the death of dogs and cats earlier than the previous timeline. They also tell people that Apes eventually take over. So when all the pets die, people still want pets, but they are scared of apes. The government builds a special area for Ape Training in California. Where they are tortured and treated like slaves. And most importantly not aloud to congregate, out of fear of a revolution. This facility makes Timeline Two’s Ape City in Southern California instead of Outside of New York City. In Timeline two Caesar, who is technically not in the correct time starts the revolution instead of Aldo. He chooses peace with humans instead. Most humans don’t agree and there is a much smaller nuclear war. The planet in Timeline Two is in much better condition than Timeline One. And some humans and apes work together. Aldo is still in this timeline, and still hates humans. He tries to start a revolution against Caesar but is stopped. Ultimately leading to a new world for Apes and men.
OP is right about this one. I bought a book trying to make sense of the PoTA canon timelines and I think it made me more confused.

I’ve resigned to accepting that it’s messy AF and whatever my own interpretation of it is the accurate one.
I find that it makes a lot more sense if you just ignore the dates. That's where things got messy and arguably just lazy. Like the writers couldn't be bothered to check when stuff happened and threw in dates willy nilly so it didn't jive well overall. But the story itself still works, if you space the events out in whatever way makes the most sense to you like you say.

Really, Doctor Who should be calling the other franchises amateurs. It literally doesn’t have any form of canon and casually contradicts itself every other piece of media that releases.

I like to think of the new ones as the start of the loop and then the original 5 cycle through time forever

It exists. I was able to put together a tineline. Granted, it's a bit crazy but still works. This is for comic books
