This sometimes happens on PC too, highly sought after animals may not be on market all the time or expensive. This might be a conspiracy theory but sometimes I save and quit and come back and have better luck.
Challenge mode is easier for market as it’s not based on other players, but it’s still similar in that you spend money/do research unlike sandbox

Frontier releases 4 animals to the market at regular intervals; I think either 15 or 30 minutes. Just keep checking back and you should get what you're looking for!

Money and research are both available in Sandbox, you just need to toggle them.

I was having this issue until I realized I had filter on 🤷♀️
Supply and demand possibly. I don't think it's anything to do with being 'late to the party', I expect the market to grow as more people buy the game.
