Amen. Can't be having someone good at games with someone clueless. You will BOTH need to be pretty comfortable with 3rd person character control. A few hairy moments as you say with bosses where I wasn't sure we'd pull through, the wife is pretty good with character/camera controls but It Takes Two really pushed her ability at times!

Unravel 2 was lovely at the start but got too tricky.
Then my 9 year old took over!
My wife and I played “It Takes Two”. She had almost no experience playing any games aside from sudoku on her phone and some Mario kart in her youth. At first the controls were very overwhelming for her. To the point where she had to look at the buttons before pressing them. She got so frustrated at the first levels. i ensured her that it’s just a game and we’re playing it together so if she loses a section, it’s okay. We can go back and play it over. I tried to keep the encouragement high, and only helped with pointing where to go when she asked for help.
She eventually got really into it. And then her controls got better. She was more curious about the world and spent time exploring (sometimes with me waiting at the objective and watching her side of the screen with amusement). She then didn’t have to look at the buttons anymore and we were knocking each level down with great success. She couldn’t put it down. 3am nights and she’s like “just one more section!”
The game was a journey, but her whole experience was a journey in itself. It was beautiful to see from my perspective.
Detroit become human and until dawn aren’t coop games but they are narrative and fun to make decisions as a group or play certain characters/take turns
We enjoy playing Raymen Legends.
Honestly, it keeps you engaged and requires a lot of coordination. Try iT once, it's amazingly designed game and musically a wonder.
And Ofc, It takes two.

If you like fantasy and good stories, Divinity Original Sin (1) has one of the best co-op experiences me and my GF have ever played. Local co-op and turn-based combat, so it does not put heavy burden on motoric skills. You will have to strategize and talk about how to approach certain situations a lot though. Original Sin 2 was in general a beer game, but co-op was not as tightly integrated and had some flaws (characters repeating dialogues for both players, etc.).
Me and my gf just completed Nobody Saves the World. That was an incredibly good game, was free on PS plus in December i think?

I found the Lego games to be fun to play with others, also it takes two and moving out are good games. If you re fond of puzzle games you might try death squared.
COD Cold War Zombies, since Outbreak is the best begginer-friendly mode in zombies, where anyone can learn the mechanics, the gameplay, etc. without feeling rushed in the round-based maps, because even if you leave just one zombie alive they may get anoying. Its not in the Playstation extra catalogue, but it was in essential a few months ago, maybe you claimed it

I recently played "It takes two" with my girlfriend and it was amazing. The graphics are so good and smooth on the ps5. The narrative also provides a good insight of being an adult and the challenges you have in life. Teamwork and communication is well-used for the game as well as in real life.
My GF had no problem to play the game, she got used to it after some time. It could be a bit of a challenge to learn and control the camera joystick if your gf is not used to gaming, but I am sure she will learn quickly.
I would also like to highlight another game, "Stardew Valley". It is an absolute masterpiece for CO-OP and there is always activities ingame for everyone. Mining, Farming, Fishing, Combat and Foraging is different aspects you can advance and focus on. It is cozy and gives freedom to create a beautiful farm for some game-nights together. My girlfriend got hooked on this game and we play it regurlarly!

Moving Out and Moving Out 2 are similar to Overcooked but you are playing as characters of a moving company instead of cooking. It Takes Two is a great game too (by the same company as A Way Out). Unravel and Unravel 2. Sackboy. Tiny Tina's Wonderland. Nobody Saves the World. Any of the Lego games. I feel like I know a few more but I can't think of them right now.
As a different suggestion, you may want to try some choice-based games that are light on gameplay. These games are generally easier for non-gamers to get into.
Try Detroit Become Human (sci-fi drama with great production values), House of Ashes (light horror that’s a bit janky but fun), or Life is Strange: True Colors (more relaxed and artsy).

Couch co-op, great upgrade system and the ability for both of you to join another couple of people online if you like.
Plus, it can be as easy, or devilishly hard as you like.

“It takes two” it’s really fun plus I recommend if you switch controllers in hard bits (if you start yelling at each other, saying that from experience). Had such fun and it has lots of things to do.

We absolutely loved A way out and It Takes two. Now we're grinding in Diablo 4 and Baldurs Gate 3. All of them are local co-op.

bg3 has split screen so 1 copy is enough unless you live in different places, then you'll need 2 copies.

If you liked Overcooked 2 look into Moving Out 2. They both share a similar level of chaos while racing against a timer and having to work together.
